I don't know if there is a definitive style guide on it, but I lean towards "eLearning." There's no hyphen in "email" so I avoid that hyphen (and an unnecessary character), but "elearning" just seems odd to me.

Jay Cross is noted to have coined the term for the web. He uses "eLearning." I suggest going with his lead.

Style Guide
After researching the web, our Style Guide has eLearning as the official one to use. Seems to be the most generally accepted as well.
